This
project is currently in the implementation phase. Lunch Lessons
performed a Feasibility Study in the district from May through September
2008 and following the study presentation in October 08, Lunch Lessons
was engaged in January 2009 to begin the transition process outlined
in the study.
"The
Lunch Box" - A project with Food, Family, Farming Foundation and
the Chez Panisse Foundation - Contact

This
project which has been part of our thinking around school lunch
reform for many years has recently been funded by the Kellogg Foundation
for its development and feasibility phase. The concept is to develop
a web based tool box which districts can utilize to help transition
programs to regionally reliant whole foods based nutrition programs.

Beth
completed a full assessment of the district in November of 2008
and presented the findings to the Board of Education in December.
Santa Cruz is now focusing on wellness as a cornerstone for academic
improvement for its population. A new Wellness Policy paired with
the Assessment and Next Steps for the coming five years will hopefully
yield a new paradigm for that district.

Beth
completed an assessment of the district to discover the practicality
of shifting from being a contract client of the local public district
to transition to a self-operated scratch cooking system for this
four-school, 1000 student district. Once the Board decided to move
forward the project included Wellness Policy Development, Strategic
Planning, Central Kitchen Renovation plans and oversight, POS implementation,
all procurement systems and vendor relationships, menus, production
systems, software purchasing and recipe database implementation
and training, staff training and professional development for existing
staff, hiring and training of director, sous chef and production
team, presentations and training for administration and faculty.
Work moving forward will focus on curricular integration with nutrition,
physical activity, and dining services to keep strategic plan on
track.

Panisse Foundation - Berkeley , California

Beth
assisted Nutrition Services Director, Ann Cooper , in development
of procurement systems, menu development, financial analysis and
staff training for Berkeley Unified School District's, School Lunch
Initiative - a partnership project between BUSD, Chez Panisse Foundation
and Center for Ecoliteracy. I am also writing the White Papers for
the foundation on the BUSD history, costs, and training which will
be released later this year. |
